What are Microgreens and Why Eat Them?

Microgreens are grown using the same seeds that are used to grow the full-sized version of the same vegetables/plants. However, they are grown more densely and harvested at an earlier stage. So, microgreens have similar nutrients as the full-sized plants – some varieties are thought to have up to 40x their full-grown versions (1). They are delicious added to salads, smoothies, sandwiches – we put them on everything! We think they are great options for kids and older adults who may find it difficult to get enough nutrition into their meals/snacks.   They also add beautiful color and crunch to meals.

Some studies show the potential for microgreens to lower cholesterol and help reduce liver inflammation. They are also full of antioxidants, which help protect your cells against illnesses such as heart disease and cancer.

Aside from the health benefits, they are also easy to grow locally and sustainably. They can be grown in small indoor spaces with or without artificial lighting and with or without soil. Especially during these difficult times where we have seen food shortages and supply chain interruptions, it is essential that our communities start to find new ways to provide healthy food. We think microgreens are one of the best ways to do this because of how they are grown but also because they help boost our health and immune systems.
