Recipe of the Week: Pizza "Cheese" Sauce

Microgreens are a perfect topping on any type of pizza. They add color, flavor, and so many nutrients . You would have to add a lot of mature broccoli/kale to get the same amount of nutrients as a handful of microgreens on top of your slice!

This is our favorite plant-based alternative for homemade pizzas. Enjoy!

 

Pizza Cheese Sauce:

 

3/4 cup Cashews

1/4 cup Nutritional yeast

1 clove Garlic – peeled (can also substitute garlic powder)

1/4 Lemon – peeled (can also use 2 tbsp lemon juice, but keeping the inside of the lemon adds extra fiber!)

1 cup Plant Milk*

1/4 cup Water*

2 tsp Cumin

1/4 tsp Turmeric

2 tsp Onion powder

Salt to taste

 

1. Soak cashews in boiling water for at least 10 minutes*

2. Add all ingredients to blender

3. Use as cheese alternative for homemade pizza! Spread cheese sauce evenly across top pizza and it should thicken in the oven.

 

Notes:

*  Can use 1 1/4  cup vegetable broth in place of milk and water

*  You may need to soak cashews for longer if you do not have a high-speed blender. If this is the case, we recommend soaking in warm water overnight.
