Recipe of the Week: Pea Shoot Salad

Pea shoots are one of our favorite microgreens. They can be used in addition to salad greens, or as the base of a salad. Here is our recipe for Caesar Pea Shoot Salad with Chickpea Salad

 

 

Pea Shoots

 

Dressing:

3/4 cup cashews - soaked in boiling water for 10 minutes

1 garlic clove

2 tsp capers

1/2 peeled lemon

2 tsp Dijon mustard

1/2 cup water (more/less depending on how thick you like your dressing)

salt and pepper to taste

 

Chickpea Salad:

1 can chickpeas - drained and rinsed

2-3 tbsp vegan mayo

1/2 red onion - diced

3 tbsp sunflower seeds

3 tbsp carrot - finely diced

3 tbsp celery - finely diced

1/4 red pepper - finely diced

juice from 1/2 lemon

salt and pepper to taste
