Here is our plant based version of this delicious meal! Great for potlucks, cookouts, or an easy crockpot meal for a weekday.
Ingredients:
1 oz microgreens
Bread of your choosing (we love rye or sesame buns for this meal!)
1 green bell pepper - chopped
1 small onion – diced
3 cloves garlic – minced
1 cup water
1 cup broth (plus extra for sautéing)
1 cup brown lentils
1 cup tomato sauce
¼ cup ketchup
3 tbsp tomato paste
1 tsp Tamari
1 tsp chili powder
1 tsp yellow mustard
1 tbsp cider vinegar
1. Cook green pepper and onion in veggie broth until softened
2. Add garlic, water, broth, and lentils
3. Bring to boil, then reduce heat to simmer. Cover and cook until moisture is absorbed (about 20 minutes).
4. Stir in remaining ingredients (except the microgreens) and simmer for additional 10 minutes until thickened
5. Serve on top of bread or buns
6. Pile microgreens on top for extra crunch, flavor, and nutrients!
