Recipe of the Month - Spring Rolls

Spring Rolls are a great way to use microgreens! They make them beautiful/colorful, you can use any varieties, and the microgreens add a great crunch. Not to mention your spring rolls will be packed with nutrition. 

Ingredients:

Spring roll wraps

Avocado

Carrots

Cucumber

Broccoli, Radish, and Pea Shoot microgreens 

Cut carrots, avocado, and cucumber as desired. Prepare spring roll wraps as directed on package, and place veggies and greens in center prior to rolling. 

Peanut Sauce:

1/3 cup natural peanut butter 

2 tbsp honey (maple syrup is an alternative) 

2 tbsp rice wine vinegar

3 tbsp soy sauce

2 cloves garlic - minced

1 tbsp water 

Whisk together and serve!  


You can use ANY variety of veggies. We also thought these would be great with cabbage, peppers, lettuce - you name it. We also plan to try these with plant-based proteins such as seitan.
